Lamb, mango and sweet potato curry

Preparation time less than 30 mins

Cooking time 10 to 30 mins

Ingredients

350g/12oz rack lamb, bones removed, cut into cubes
1 tsp ground ginger
½ tsp dried chilli powder
2 tsp curry powder
salt and freshly ground black pepper
1 tbsp olive oil
1 garlic clove, finely chopped
½ large sweet potato, peeled, cubed
300ml/½ pint double cream
½ mango, peeled, stone removed, cut into cubes
1 lime, juice only
small handful fresh coriander, chopped

Method

1. Place the cubed lamb into a large bowl, add the spices, salt and freshly ground black pepper and leave to marinate for ten minutes.
2. Heat the olive oil in a saucepan, add the lamb and brown on all sides. Add the garlic and fry for one minute. Add the cubed sweet potato and cream, bring to the boil, cover with a lid and simmer over a medium heat for 12 minutes.
3. Add the mango cubes and cook for three minutes or until the meat is tender.
4. Remove from the heat, add the lime juice and stir in the chopped coriander.
5. Spoon into a bowl and serve garnished with chopped coriander.
