Low Carb Recipes: Creamy Potato-Oat Soup

Ingredients

In a large pot combine:

6 medium potatoes, chopped
1 large bunch of broccoli, chopped
10 cups vegetable broth
1 tbsp. curry and a pinch of cayenne

Preparation:

Bring to a boil; reduce heat and simmer 30-45 minutes until vegetables are tender.

If desired, puree in a blender; return to pot.

Stir in:
1 cup cooked rolled oats

Heat thoroughly before serving.

Servings: 8
