Ingredients
450g butternut pumpkin, unpeeled, cut into 1cm-thick slices
1 tablespoon ground coriander
1 tablespoon paprika
2 teaspoons ground cumin
12 trim lamb cutlets
olive oil cooking spray
80g salad leaves
150g cherry or grape tomatoes, halved
1 Lebanese cucumber, halved, cubed
Method
1. Preheat barbecue grill and plate on medium-high. Arrange half the pumpkin on a microwave-safe plate. Drizzle with 1 tablespoon of water. Cover. Microwave on HIGH (100%) power for 2 minutes. Repeat with remaining pumpkin. Drain.
2. Combine spices. Coat lamb in spices.
3. Spray lamb and pumpkin with oil. Cook lamb on barbecue grill for 4 minutes each side. Cook pumpkin on barbecue plate for 2 to 3 minutes each side. Serve with salad leaves, tomatoes and cucumber.
